Visual head tracking hardware - around $150. Uses USB and Windows. I'd imagine reverse engineering it wouldn't be too gnarly so you aren't tied to Windows ...
Somebody has already (as donateware) done the interfacing to Brookshire's VSA (Visual Show Animation) -- the MonkeyBasic TrackSkull.
A side note about VSA; it's not a bad little system if you want to jump into animatronics without as much hardware tinkering on the control side.
TrackSkull and VSA are written for Windows systems. I haven't tried either on Wine.
